- ½ cup butter softened
- 1 cup sugar
- 4 large eggs
- 1 pinch of salt
- 1 cup all-purpose flour
- 2 teaspoons baking powder
- 1 teaspoon cinnamon
- 1-⅓ cup almond meal/flour
- 2.5 ounces dark chocolate finely chopped or grated (see instructions)
- 1 glass sour cherries drained (about 350 g / 12 ounces)
Begin by preheating the oven to 350°F/180°C. Next, ensure your 10-inch/26cm round cake pan is well-prepared with grease, flour, and lining.
Begin by creaming the softened butter and sugar until it's light in texture. Then, add the eggs one at a time, ensuring you beat the mixture after each addition. In a separate bowl, whisk together all the dry ingredients. Finally, combine the dry ingredients with the wet mixture.
Finally, fold in the drained cherries and chocolate chips. Pour the batter into the prepared pan and bake for 50-60 minutes, or until a toothpick inserted in the center comes out clean.
Chill the cake in the pan for 30 minutes, then flip it onto a large plate, and finally, place it right side up on a wire rack.
Chill thoroughly, dust with powdered sugar, and optionally serve with a dollop of vanilla whipped cream. Store covered for up to a week.
