Ingredients
  

  • ¼ cup plus 1/3 cup sliced almonds
  • 1 cup homemade or canned whole berry cranberry sauce
  • 1 tablespoon cornstarch or tapioca flour
  • 1 cup all-purpose flour
  • ½ cup almond flour
  • 1 teaspoon baking powder
  • ½ teaspoon  kosher salt
  • 1 cup plus 2 teaspoons granulated sugar
  • 2 eggs plus 1 egg yolk
  • 2 oranges (2 tsp. zest, 1/2 cup juice)
  • ½ teaspoon almond extract
  • 5 tablespoon unsalted butter, melted and cooled

Instructions
 

  • Begin by preheating the oven to 350°F. Next, generously butter a 9-inch springform pan. Then, line the bottom of the pan with parchment paper and make sure to butter the paper as well. Finally, evenly pat 1/4 cup of sliced almonds along the sides of the pan.
  • To create a silky mixture, blend cranberry sauce, cornstarch, and a pinch of kosher salt in a food processor or blender. Then, strain the result through a fine-mesh sieve into a small bowl, discarding any solids.
  • In a separate small bowl, whisk together flours, baking powder, and 1/2 tsp salt.
  • Blend 1 cup sugar, eggs, yolk, orange zest, and almond extract in a large bowl. Incorporate orange juice and melted butter, then add the flour mixture. Whisk until well combined.
  • Spread batter in pan, spoon cranberry mixture, top with 1/3 cup sliced almonds, and sprinkle 2 tsp. sugar.
  • To achieve a golden brown finish and a clean toothpick test, bake for 30 to 35 minutes. Allow it to cool completely within the pan on a wire rack. Once cooled, use a small sharp knife to gently remove the sides of the pan. Finish it off by dusting the cake with powdered sugar before serving. This recipe serves 8.
