Ingredients
  

  • 2 cups old fashioned oats (divided)
  • 3 large apples (peeled, cored, and diced, divided)
  • 1/3 cup maple syrup (for a natural sweetness)
  • 2 tsp vanilla extract (for a warm flavor)
  • 2 tsp ground cinnamon (adds spice and depth)
  • 1 tsp baking soda (helps the oatmeal rise)
  • 1 tsp baking powder (to ensure a light texture)
  • 1/4 cup oat milk (a dairy-free option for creaminess)
  • 1/4 cup yogurt (for a creamy consistency and tang)
  • 1/2 cup applesauce (adds moisture and a fruity flavor)
  • 2 large eggs (for binding and richness)
  • 2 tbsp coconut oil (adds healthy fats and a subtle coconut flavor)

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease a 9x9-inch baking pan with non-stick cooking spray and set aside.
  • Set aside 1 cup of diced apples and 1/2 cup of the oats.
  • Blend ingredients: In a blender, combine the remaining apples, oats, maple syrup, vanilla, cinnamon, baking soda, baking powder, yogurt, applesauce, eggs, and coconut oil. Blend for 30-60 seconds until fully combined.
  • Fold in the oats and apples: Remove the blender blade and gently mix in the reserved 1/2 cup oats and 1 cup diced apples by hand.
  • Transfer to the pan: Pour the oatmeal mixture into the prepared baking pan, spreading it evenly.
  • Bake for 30-35 minutes, or until the top is set and a toothpick inserted in the center comes out mostly clean.
  • Cool completely before slicing and serving.
  • Store leftovers in an airtight container in the refrigerator for up to 7 days or freeze for longer storage.
