Dry
- 2 cups all-purpose flour
- 2 teaspoons baking powder
- ½ teaspoon baking soda
- 1 teaspoon sugar
- ¾ teaspoon table salt
Butter & Dairy
- 10 tablespoons butter (6 tablespoons melted, 4 tablespoons cold and grated)
- 1 cup buttermilk or kefir (cold)
Cheese & Flavoring
- 4 oz. cheddar cheese, grated
- 1–2 garlic cloves, smashed or minced
- 1 tablespoon fresh parsley, minced
Preheat the oven to 475°F (245°C). Line a rimmed baking sheet with parchment paper.
In a large mixing bowl, whisk together the flour, baking powder, baking soda, sugar, and salt until well combined.
Melt 6 tablespoons of butter and set it aside to cool slightly.
Using a box grater, grate the cold 4 tablespoons of butter directly into the flour mixture. Then, add the grated cheddar cheese and mix everything together so the butter and cheese are evenly distributed and coated with flour.
In a separate bowl, mix the cold buttermilk with the melted butter. The butter will form small, solid bits in the buttermilk—this is key to creating flaky biscuits!
Make a well in the center of the dry ingredients and pour in the buttermilk mixture.
Use a spatula or wooden spoon to gently stir the mixture until just combined. Be careful not to overmix—some streaks of flour in the dough are perfectly fine.
