Instructions
Preheat oven to 350 degrees F (175 degrees C).Grease a 9x13 inch baking pan and set aside.
In a large bowl, mix together sugar, oil, eggs, vanilla, and buttermilk.
Add in the grated carrots, shredded coconut, vanilla, and crushed pineapple.In a separate bowl, combine the flour, baking soda, cinnamon, and salt.
Gently stir the dry ingredients into the carrot mixture.Stir in the chopped nuts.
