- 1 & 1/2 cups (180g) all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/2 cup (113g) unsalted butter, melted and slightly cooled
- 1 & 1/2 cups (300g) firmly packed light brown sugar
- 1/2 cup (127g) creamy peanut butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup (170g) white chocolate chips or chunks
Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan.
In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.
In a separate large bowl, combine the melted butter, brown sugar, and peanut butter. Use an electric mixer on medium speed to beat until smooth. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla extract.
Reduce the speed to low and gradually add the dry ingredients, mixing until just combined. Stir in the white chocolate chips or chunks.
Spread the batter evenly in the prepared pan.
Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
Remove from the oven and allow the blondies to cool completely in the pan before cutting into squares.
