Ingredients
  

  • 1 & 1/2 cups (180g) all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 cup (113g) unsalted butter, melted and slightly cooled
  • 1 & 1/2 cups (300g) firmly packed light brown sugar
  • 1/2 cup (127g) creamy peanut butter
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup (170g) white chocolate chips or chunks

Instructions
 

  • Preheat the oven to 350°F (175°C). Grease an 8-inch square baking pan.
  • In a medium bowl, whisk together the flour, baking powder, cinnamon, and salt. Set aside.
  • In a separate large bowl, combine the melted butter, brown sugar, and peanut butter. Use an electric mixer on medium speed to beat until smooth. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla extract.
  • Reduce the speed to low and gradually add the dry ingredients, mixing until just combined. Stir in the white chocolate chips or chunks.
  • Spread the batter evenly in the prepared pan.
  • Bake for 35 to 40 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs attached.
  • Remove from the oven and allow the blondies to cool completely in the pan before cutting into squares.
